It’s Friday! That means it’s time for my weekly wrap-up. This is my chance to tell you about what I’ve been up to, and what I’m loving this week! You’ll see that some of it is nutrition and health related, and some of it is just for fun. Let’s go!
Since we’ve successfully transitioned from fall weather straight into spring here in Texas (Seriously, what happened to you, winter? You totally held out on us.), I’ve been in the mood for quick, easy flavorful sides that can go with anything we want to throw on the grill. This week, I made my Quinoa Tabbouleh. You seriously need to click through for the recipe. It comes together in the time it takes to cook the quinoa. You can chop everything up while the quinoa cooks and then toss all together. This is one of my go-to recipes.
What I’m Reading:
My Mother Was Nuts: A Memoir by Penny Marshall. I read this book a few years ago, but I actually picked it up and read some of it again. I love Penny Marshall – as an actress and a director – and this is a look at her life from childhood to now. It is fascinating, and she made me laugh many times throughout the book. What I love is that even when she messed up, or made a bad choice, in her life, she owns it.
I absolutely love Laverne & Shirley, and this book covers that time in her life extensively. I’m pretty sure I’m the only 12 year old (in 1990, mind you!) that made watching L&S reruns part of their summer routine. I’d eat lunch, and then watch Laverne get into trouble for an hour (2 back-to-back episodes? Yes, please!) before heading outside to play for the afternoon. Bless.
A few things to note:
- We didn’t have cable, so I could blame it on that, but I’d be lying. I would have watched it anyway.
- My parents both worked, so I could have watched anything I wanted, and they would never have known. Laverne & Shirley would still have been my choice.
- This was every day. Not just some days. Every.Single.Day for an entire summer.
- We’ll just say I’m an old soul. Yeah, that’s it…
- I am such a nerd.
Spoiler Alert: Shirley (Cindy Williams) was a bit uptight on the show, and come to find out, she kinda was in real life, too. #teamlaverne This is a great read, and has some wonderful stories about her brother, Garry Marshall – another favorite – too. She has led such a full life, and this book takes you along for the ride! Schlemiel, Schlimazel, Hasenpfeffer Incorporated!
What I’m Watching:
Top Chef. There are few things I love more than a competition cooking show, but I’m pretty picky about which ones I watch. I think I just love watching people cook all these amazing things in 45 minutes or 2 hours, knowing I couldn’t cook it if I had two days. Ha. Note the super simple recipe I shared above. I have watched Top Chef from the beginning when Katie Lee was the host. I love Katie, but Padma wins this one. Anyway, we’re down to the final three chefs, and I won’t give it away in case you aren’t all caught up. This season they are in Charleston, and it’s on my bucket list, so it was fun to watch them cooking with local ingredients. You can watch episodes online as well!
What I’m Listening To:
Maroon 5 – Sugar. This video is so fun. It’s been viewed over a billion times (no joke), so you’ve probably already seen it. There is one bride’s reaction that makes me laugh every time. That reaction = correct and legit. Can you guess which one?
What I’m Wearing:
Y’all. I can’t even with clothes this week. The weather is weird, my clothes don’t really fit right and I’m just blah about the whole thing. I took advantage of some sales this week and ordered some new spring/summer clothes. I’ll report once I get those in!

What I’m Loving:
We’re starting to see signs of spring everywhere. Bluebonnets are already popping up, and the Texas Mountain Laurel in our front yard has started to bloom. It makes me happy when I look outside and see it. 🙂 The blooms are only in one little area at the moment, but I’ll grab a picture when the entire thing is covered in flowers.
What I’m Looking Forward To:
My husband and I are celebrating our 10 year wedding anniversary in a few weeks, and will be going out for a nice dinner. We got married at the Justice of the Peace, so it was just the two of us, and a quiet dinner seems the perfect way to celebrate 10 years. Side note, I got mild food poisoning on our marriage weekend, so here’s hoping for better luck and better food.
