Weekly Wrap-Up: October 16 – 22

It’s Friday! That means it’s time for my weekly wrap-up. This is my chance to tell you about what I’ve been up to, and what I’m loving this week! You’ll see that some of it is nutrition and health related, and some of it is just for fun. Let’s go!

What I’m Eating:

I taught a class this week and wanted a snack that represented both protein and healthy fats. I came across this recipe for rosemary walnuts, and thought it would be perfect. Walnuts have about 4 grams of protein in a handful, but they are also packed with omega-3 fatty acids, which are anti-inflammatory and heart and brain protective, along with vitamin E, folate and antioxidants.

I have to tell you, these are delicious! They are perfect for snacking, but would also be wonderful to take to any upcoming holiday party. They are that good – and so easy to make!

Roasted Rosemary WalnutsRosemary Walnuts | rashon

Ingredients

  • 2 tablespoons butter (or coconut oil, olive oil, ghee, avocado oil)
  • 2 tablespoons finely chopped fresh rosemary
  • 1 – 1 1/2 teaspoons black pepper
  • 3/4 teaspoon sea salt
  • 2 cups walnuts

Directions

  1. Preheat oven to 300°F. Melt butter (or coconut oil, olive oil, ghee, avocado oil) in a small saucepan; stir in rosemary, pepper and salt. Add walnuts and stir well with a rubber scraper until mixture evenly coats walnuts.
  2. Transfer to a baking sheet and cook for 30 minutes, stirring every 10 minutes. Let cool completely before storing in an airtight container.

Tip: Watch the walnuts closely in the last 5 minutes of cooking – it’s easy for them to go from perfectly roasted to burned. Also, you can’t really overdo the pepper here – it really adds to the whole flavor.

What I’m Reading:

I didn’t have much time for reading this week, unfortunately. I love reading, and things have been so busy lately, that it has sort of fallen to the back of the line in terms of priorities. Bummer. If you haven’t seen it yet, the first part in my series on Adrenal Fatigue is up now. Next week, I’ll be talking more about signs and symptoms, and what you can do about it nutritionally. I’ve been dealing with this, along with some other issues for the past few months, and I will be talking about some of the things that have worked for me.

What I’m Watching:

Project Runway. I haven’t had a ton of tv time lately, but I have managed to get caught up on this season of Project Runway. I love this show – the competition, the clothes, Tim Gunn. I mean, really, who doesn’t love Tim Gunn?!? I will admit that my favorite looks are often things the judges hate, and vice versa, so I may not have the greatest fashion sense. They’ve had me hooked for 15 seasons, and I’m sure I’ll keep on watching. Make it work, people!

What I’m Wearing:

Okay, so every week I tell you that I’m tired of the Texas heat, but it refuses to cool off here. We had a “cold front” come through, so we’ll soak up every moment of that 78 degree cold snap! Needless to say, I haven’t gotten to wear anything cute and cozy just yet, but I did get a couple of things that I’m excited to wear (eventually). For the record, I do a lot of shopping at Old Navy and Gap because they have tall sizes. If you’re a tall girl (I’m 5’11”), these are my go-to’s, but J Crew also has some great options. Some of the brands Nordstrom carries (like this shirt I shared last week. side note: the Cypress color is back in stock online) work well for longer arms and legs, too. Here are a couple of the shirts I got:

This Classic Flannel Shirt is super flattering, and comes in multiple colors. I chose this color combo because it was different than other things I already have.

Let’s face it, I’m sucker for plaid and flannel in the fall. I love that it’s easy to throw on with boots and jeans, but it can also be layered with sweaters or a denim jacket for colder weather. This is also called the Classic Flannel, but I will tell you it’s a bit more fitted than the one above. I love the color combination of this shirt, but this comes in multiple colors, and they’re all cute. Next week, I will share some things that don’t involve plaid or flannel!

What I’m Loving:Beautycounter Holiday Gift Sets | rashon
