It’s Friday! That means it’s time for my weekly wrap-up. This is my chance to tell you about what I’ve been up to, and what I’m loving this week! You’ll see that some of it is nutrition and health related, and some of it is just for fun. Let’s go!
What I’m Eating:
This week was so much better in terms of schedules and getting to eat at home! I actually got to go the grocery store, which felt awesome. Meals were pretty simple, and easy to make. My body was craving just the basics after eating so many meals out last week. Breakfasts were eggs, spinach and feta chicken sausage and some veggies. This week I roasted sweet potato, mushrooms, broccoli, cauliflower and mini sweet peppers (red, orange and yellow). Lunches were either salads loaded with spinach, arugula, mini sweet peppers, tomatoes, carrots and cucumber with chicken or lettuce wraps with veggies and hummus on the side. Dinners were also easy – a protein and loads of veggies. I used lots of herbs and spices to change things up and add a punch of antioxidants!
One of my favorites that I’ve been eating this week is sprouted pumpkin seeds. Sprouting seeds and nuts boosts the nutrient content, and also unlocks enzymes that make them easier to digest. Pumpkin seeds in general are a good source of protein, iron, magnesium, copper and manganese. You can buy them in the bulk section of some grocery stores, or there are some great brands that package them. I love the Go Raw brand. They use minimal, clean ingredients and I can find them in my local HEB. The sea salt are delicious, and the fiesta blend has a little kick of jalapeño, cilantro and lime. These are great on their own as a snack, or on salads and veggies for a little crunch!
What I’m Reading:
I didn’t have much time for reading this week. If you’re looking for a quick read and a recipe, you should check out my Food for Thought post from this week. It’s all about spinach! Spinach is really a powerhouse when it comes to nutrition, and should be something you include in your diet.
What I’m Watching:
I have hardly watched any tv the past few weeks. I’m pretty happy with that situation! We did watch the movie Central Intelligence with Kevin Hart and Dwayne Johnson (or as my stepson called him when he was little, just plain “The Rock” Johnson. Ha!). Here’s the thing: this movie was really dumb, but it did provide some laughs, and we all know that laughter is something we need more of in our lives! I’ve included a clip of the outtakes from the movie. Pretty funny.
What I’m Wearing:
The weather in Texas is all over the place. It’s cool, almost chilly, in the mornings and hot in the afternoon. Finding a weather appropriate outfit is a challenge right now. I finally did some fall shopping, and committed to pair of booties. I bought them online, so as soon as they get here and I’m able to try them on, I will share my thoughts. I bought a few tops as well, and am waiting for them to arrive! I did find a great top at Nordstrom Rack. I love this shirt – it’s loose and flowy, but still flattering, and the sleeves are long enough for this tall girl. The exact color, Cypress (a pretty gray-green) is sold out online, but I bought mine in the store. All of the colors are great, and it’s one of those shirts you can dress up or down, and will look super cute with a scarf for chilly fall mornings/nights.
What I’m Loving:
I can’t get enough of these math videos. They crack me up! My awesome sister-in-law shared this video with me last week, and I’ve watched it multiple times. I’m pretty sure we’ve all felt this way when shopping at Whole Foods.
What I’m Looking Forward To:
